Continuing on our theme from the FABULOUS book I got for Christmas, The 150 Healthiest Food on Earth by Jonny Bowden, PhD, C.N.S. Here are the top choices for C veggies: Which one are you going to eat this week?
CABBAGE: the cabbage family could very well be the BEST due to it’s cancer-fighting ability! (indoles and other phytochemicals), anthocyanins (colour) not only make it pretty but are flavonoids (powerful antioxidants), fight free radicals, anti inflamatory, calcium, vitamin C, vitamin Km beta-carotene, carotenoids, lutein and zeanthin AND 4 grams of fibre for every cup!
CARROTS: Mom was right…this is the King of the Veggies! Could one carrot a day help reduce lung cancer?? Cartenoids, (decrease bladder, cervix, prostate, colon, larynx, and esophageal cancer) High in Alpha AND beta carotene (together produce vitmain A in the body), high in lutein and zeaxanthin that together have shown huge promise for eye health, calcium, potassium, magnesium, phosophorus, vitamin C and 30 000 IUs of vitamin A AND 5 grams of fibre!
CAULIFLOWER: Yes it is a “White” food, but don’t let the lack of colour fool you. It is packed with…indoles, sulforaphane, potent antioxidants, 3 g of fibre, vitamin C, potassium and folate! Make fake Mashed potatos – butter, lemon, and sea salt, YUM!
CELERY: GREAT for appetite control (just add a bit of almond butter!), #1 veggie for treating high blood pressure, great source of silicon for bone health, aacetylenics (stop the growth of cancer cells).
COLLARD GREENS: provide valuable cancer fighting phytochemicals, 1 cup has the same amount of calcium as 8 oz of milk!, and 5 g of fibre, add magnesium, phosphorus, potassium, vitamins C, A and K, beta-carotene and more of that amazing lutein and zexanthin! Go Collard Greens!!!
